I’ve recently discovered that I actually have Lyme Disease.  My next experiment will be to see if my reaction to nightshades changes after working to treat Lyme.  All posts prior to July 21st, 2011, are before my official diagnosis of Lyme disease and you’ll see my utter confusion and frustration over the waves of symptoms that would come and go.  I would also like to point out that NO DOCTOR listened to me and said “let’s test for Lyme”.  It took years of searching for answers before I made the connection MYSELF and then specifically found someone who would order the test for me. So, if you think something is wrong with you, don’t accept them telling you it’s all in your head.

This online journal is my personal journey through an elimination diet.  I started this website by first eliminating nightshade foods and plants from my diet as they were the worst offenders.  Along the way I realized that it wasn’t that simple… I’m also allergic to “red foods”.  Weird.  I’m still working my way through the diet so you’ll find me making mistakes along the way, but I hope you’ll be able to learn a bit through my mistakes.  I absolutely hate cooking, so the recipes you find here will, for the most part, be pretty simple.  I also work a full time job so I wanted to include tips on how to deal with that for those of you who eat out a lot (or every day like I used to).

My name is Jenifer and I’m a 41 year year old woman as of today (November 28th, 2010) who is a full time computer programmer with an hour drive to work.  I miss the days of working from home, but they just weren’t profitable enough.  sigh.  Anywho… I live with my significant other and our 8 year old daughter.  She is showing some similar symptoms as me, so I’m trying this diet out first to see if it applies in our situation or not before including her.  Because I’m the only one trying this diet, our house is full of foods I can’t eat as I’m sure others of you will find yourself in this similar situation.  I’m desperately hoping this will be a solution to the fatigue, but only time will tell.
